Don Bocarte uses only bonito from the Bay of Biscay. Like all of Don Bocarte’s products, this white tuna (also known as albacore or Thunnus alalunga) is prepared using fresh fish. Medium-to-large bonitos, just the right amount of salt, and a meticulous cooking process–these are some of the characteristics that lead to a distinctive, juicy and delicate product.
